300 grams Raspberries (fresh or frozen)
2 Tbsps Vanilla sugar
50 grams sugar
250 grams Mascarpone
200 grams Whipped cream
2 Tbsps slivered almonds

Preparation steps

1.

Drain the peaches and cut into cubes, blend half with 50 ml (approximately 1/4 cup) juice. Rinse or thaw the raspberries and mash with the vanilla sugar for garnish.

Stir the mascarpone and sugar until smooth. Whip the heavy cream until stiff and fold in.

3.

In a large serving bowl, layer the raspberry and peach purees. Top with 1/3 of the mascarpone cream, the peach cubes then the remaining cream. Garnish with raspberries and almonds. Serve chilled.
