- 500 grams Broad bean
- 400 grams Peas
- 200 grams Ricotta cheese
- 1 bunch Daikon cress
- 1 Tbsp scallions
- 1 Tbsp chopped mint
- 6 Tbsps grapeseed oil
- 4 Tbsps lemon juice
- 1 pinch sugar
- salt
- pink peppercorns

Preparation steps
1.
Rinse the beans and peas and blanch in boiling salted water for 6-8 minutes. Drain, plunge into an ice water bath to cool and then drain.
2.
Rinse the daikon cress and cut into pieces.
3.
Mix the grapeseed oil, lemon juice and sugar and season with salt. Stir with the beans, peas, crumbled ricotta, watercress, chives and mint. Season with salt and mix well.
4.
Serve sprinkled with pink peppercorns.
