100 grams Bacon (German ham)
1 handful mixed Fresh herbs (such as chervil, dill, parsley, basil)

1 Tbsp clarified butter
100 grams Mozzarella
4 ripe Tomatoes
olive oil (extra virgin)

Preparation steps

Drain the mozzarella and cut into thick slices. Cut the ham into small cubes and fry in a dry skillet.

Beat the eggs, stir in the milk and season with salt, pepper and herbs.

Heat the clarified butter in a pan and pour in the egg mixture. Cook until golden brown over medium heat, then using a large plate flip the omelet over (holding the plate to the pan, flip upside down and then slide the omelet back into the pan).

When cooking the other side, distribute the mozzarella slices and ham cubes on top. Fold the omelet over at the center.

Transfer to a pre-heated plate and garnish with herbs.

Serve immediately with a simple tomato salad: Slice the tomatoes, season with salt and drizzle with 1-2 tablespoons of good olive oil.
