80 grams Sour cream
1 Tbsp lemon juice

Preparation steps

Toast flaked almonds without fat until golden brown while stirring. Remove from pan and cool. Grate half the almonds in a mortar and mix with creme fraiche, lemon juice and eggs. Stir in herbs and season with salt and pepper. Cut ham into 1 cm (approximately 1/2 inch) thin strips.

In a pan, melt half a teaspoon of butter. Add 1/4 of egg mixture to pan. Sprinkle with almonds, add a few strips of ham, turn and finish cooking. Make 3 more omelets the same way. Serve omelets with cilantro as garnish.
