Pastrami, Tomato and Lettuce Sandwiches with Green Tomato Relish
Ingredients
- For the relish
- 800 grams green Tomatoes
- 2 onions
- 1 garlic clove
- 2 centimeters fresh ginger
- 1 green chili pepper
- 1 pinch ground cilantro
- 80 milliliters Fruit Vinegar
- 100 grams sugar
- 120 milliliters Orange juice
- 1 pinch salt
- For the sandwiches
- 50 grams mixed Fresh herbs (such as parsley, chervil, thyme, dill)
- 1 Lettuce
- 3 Tomatoes
- 8 slices Toast
- 300 grams Pastrami
Preparation steps
For the relish: Blanch the tomatoes in boiling water, then rinse with cold water, peel, quarter and cut into large pieces.
Peel and dice onion, garlic and ginger. Rinse and halve chile pepper lengthwise, then thinly slice crosswise. In a pan, combine onion, garlic, ginger, chile pepper, coriander, vinegar, sugar and orange juice. Season with salt and simmer over medium heat, stirring frequently, about 1 hour. Remove from heat and let cool.
Meanwhile, rinse herbs, spin dry and strip leaves from stems. Separate lettuce into leaves. Rinse and shake lettuce leaves dry. Rinse, core and slice tomatoes.
Remove crusts from toast. Divide relish over half of the toast pieces. Top with tomato slices, pastrami, lettuce and herbs. Top with remaining pieces of toast, secure with toothpicks and serve.
