- 1 onion
- 1 garlic clove
- 1 Red chili pepper
- 1 red and yellow Bell pepper
- 1 small Zucchini
- 200 grams small button Mushroom
- 250 grams Spinach
- 300 Tagliatelle
- salt
- freshly ground pepper
- 2 Tbsps olive oil
- 250 milliliters Vegetable broth
- 1 tsp freshly chopped thyme
- 40 grams Parmesan (grated)
Preparation steps
1.
Peel and finely chop onion and garlic. Rinse and chop chile peppers.

Rinse and quarter peppers, remove seeds and cube.

Rinse and cube zucchini.
4.
Rinse and slice mushrooms.
5.
Rinse, drain, and coarsely cut spinach.
6.
Boil pasta in plenty of salted water until al dente.

Heat oil in a frying pan and fry onion, garlic, and chillies. Add peppers, zucchini and mushrooms and sauté for about 3 minutes. Add the broth, thyme and spinach and let simmer for about 2 minutes. Season with salt and pepper.
8.
Drain the noodles and immediately mix with the vegetables.
9.
Serve the dish on warmed plates and sprinkle with cheese as desired.
