- 4 dried Tomatoes (in oil)
- 1 large onion
- 2 garlic cloves
- 2 Tbsps olive oil
- 2 Tbsps Tomato paste
- 800 grams peeled Tomatoes (canned)
- salt
- freshly ground peppers
- 1 tsp dried thyme
- 1 tsp dried oregano
- Red pepper flakes
- 500 grams Spaghetti
- 1 fresh Basil
- sugar
- 40 grams grated Parmesan

Preparation steps

Drain the sun-dried tomatoes and chop coarsely. Peel the onion and garlic and finely dice both. Sauté together in hot olive oil. Sauté the tomato paste briefly and add the canned tomatoes and dried tomatoes. Mix well and chop. Season with salt and pepper and simmer gently, stirring occasionally, about 20 minutes. Then refine with herbs and chile and simmer for another 5-10 minutes until desired consistency.

Boil the spaghetti in salted water until al dente. Rinse the basil, shake dry and fold the leaves into the sauce. Season with salt, pepper and a pinch of sugar and mix with the drained pasta. Transfer to plates and serve garnished with Parmesan.
