400 grams Penne
salt
6 Plum tomato
150 grams Pancetta
1 handful parsley
2 shallots
1 garlic clove
2 Tbsps olive oil
freshly ground peppers

Preparation steps

Cook the pasta in plenty of salted water until al dente.

Rinse the tomatoes, cut out the stalks and chop into bite-sized pieces. Cut the pancetta into small cubes. Rinse the parsley, shake dry and chop finely.

Peel and finely chop the shallots and garlic and sauté until translucent in some oil. Add the bacon and fry until crispy. Add the tomatoes and fry for 1-2 minutes. Season with salt and pepper.

Drain the pasta and toss into the pan with the remaining ingredients. Divide between four plates and serve garnished with chopped parsley.
