1 Tbsp lemon juice

400 grams Penne
250 grams Spinach
1 onion
1 small garlic clove
250 milliliters Broth (instant)
250 grams Ricotta cheese

Preparation steps

1.

Rinse salmon, pat dry and thinly slice. Place in a bowl. Mix together lemon zest, lemon juice, pepper and 1 tablespoon olive oil. Pour dressing over salmon, toss to coat, and let marinate briefly.

Cook pasta in plenty of salted boiling water until al dente.

Rinse, drain and tear spinach into large pieces. Peel and finely dice onion and garlic. In a saucepan, heat remaining olive oil. Add onion and garlic and cook until fragrant. Add spinach and cook until wilted.

Add broth and ricotta. Bring briefly to a boil and season with salt, pepper and nutmeg.

5.

Transfer marinated salmon to hot spinach sauce. Drain pasta and add to sauce.

6.

Stir ingredients together. Divide pasta among warmed plates and serve immediately.
