- 150 grams Pancetta
- 1 onion
- 1 garlic clove
- 1 Tbsp olive oil
- 2 Tomatoes
- 300 grams Canned tomatoes
- 400 grams Pappardelle noodles
- salt
- freshly ground peppers
- 1 pinch sugar
- 2 dried, red chili peppers
- 50 grams pecorino romano

Preparation steps

Cut bacon into strips. Peel onion and garlic and finely dice. Heat olive oil in a pan and fry bacon, onion and garlic together briefly. Rinse tomatoes, cut into cubes, add to the pan and cook briefly. Deglaze the pan with canned tomatoes and simmer for a bit.

Cook pasta according to package directions in a pot with plenty of salted water until al dente. Season the tomato sauce with salt, pepper and sugar. Add chile peppers. Drain pasta and mix with the sauce. Then transfer to plates and serve garnished with grated pecorino.
