500 grams mussels
500 grams Linguine
salt
1 handful parsley
2 garlic cloves
1 Red chili pepper
3 Tbsps olive oil
150 milliliters Vegetable broth
freshly ground peppers

Preparation steps

1.

Thoroughly rinse mussels, trim as needed and drain. Discard any open mussel shells.

Cook pasta in a pot of boiling salted water until al dente.

Rinse parsley, shake dry, pluck leaves from stem and chop coarsely. Peel garlic cloves and finely chop. Rinse chile pepper, cut in half, remove seeds and cut lengthwise into thin strips. Heat oil in a pan and briefly sauté garlic and chile pepper together. Deglaze the pan with broth and let simmer. Add mussels, cover and cook for 4-5 minutes. When all shells have opened (discard any unopened shells), sprinkle with parsley and season with salt and pepper.

Add drained pasta to the pan, mix well and serve.
