400 grams fresh mussels
l white wine
1 onion
3 garlic cloves
1 sm can Saffron
200 grams Fusilli
2 Tbsps olive oil
½ bunch Basil
salt

Preparation steps

Brush mussels thoroughly under running water, discard any that are open. Put mussels with wine in the pot, cover and cook over low heat about 8 minutes, until the shells have opened. Peel onion and garlic and chop finely. Take shellfish from the liquid and keep covered and warm, discarding any that did not open. In a pan heat the oil, cook onions and garlic, deglaze with mussel liquid. Stir in saffron and let the sauce simmer for 5 minutes.

Meanwhile cook pasta in plenty of salted water. Season the sauce with salt and pepper, Rinse basil, shake dry and chop the leaves finely, stir into the sauce.

Drain pasta, mix with sauce and serve with the mussels.
