400 grams Orecchiette pasta

2 garlic cloves
1 red chili pepper
600 grams Broccoli
2 Tbsps olive oil
200 milliliters Vegetable broth
4 slices Prosciutto
freshly ground peppers
60 grams grated Parmesan

Preparation steps

1.

Cook the pasta in boiling salted water until al dente. Peel the garlic and chop finely. Rinse the chile, cut lengthwise, remove the seeds, remove the white pith and chop finely.

Rinse the broccoli and divide into florets. Coarsely chop any young leaves on the broccoli stock. Cook briefly in hot oil with the garlic and chile. Add the broth and simmer for 6-8 minutes until tender.

3.

Meanwhile ,cut the prosciutto into small pieces and add to broccoli for the last 1-2 minutes of cooking. Mix with the drained pasta and grated Parmesan, season with salt and pepper and serve.
