Pasta Salad with Sausage and Pine Nuts
Peel and thinly slice onion. Cook the pasta in plenty of salted boiling water until al dente, according to package instructions. Rinse and halve peppers, remove seeds and ribs, and cut into strips.
Cook sausages in a non-stick pan on all sides. Remove from pan and cut into slices. Heat 1 tablespoon butter in a pan. Add onion and sauté briefly. Add peppers and sauté a few minutes more. Set aside.
Drain pasta, rinse with cold water and mix with vegetables and sausage slices.
Rinse basil, shake dry, strip leaves from stems and chop leaves coarsely.
Heat remaining butter in a pan. Add balsamic vinegar and sugar and simmer briefly. Add basil and 4-5 tablespoons water. Toss mixture with pasta and vegetables and season with salt and pepper. Serve warm or cold, garnished with pine nuts.
