- 9 cups dry Farfalle (bowtie)
- 1 Zucchini (rinsed; trimmed and diced)
- 2 cloves garlic cloves (minced)
- ½ cup Balsamic vinaigrette
- 2 cups Baby spinach (roughly chopped)
- ½ cup fresh Basil (chopped)
- ⅓ cup toasted Pine nuts
- freshly ground Black pepper (to taste)
- ¼ cup freshly grated Parmesan

Preparation steps
1.
In a pot of salted boiling water, cook pasta according to package instructions until al dente. Rinse with cold water; drain well.
2.
In a large bowl, toss pasta with zucchini, garlic, and vinaigrette. Cover and chill, for several hours or if desired, for up to 24 hours. Just before serving, add spinach and basil; toss gently. Top with toasted pine nuts, cracked pepper and Parmesan cheese. Serve.
