½ chili pepper
2 tablespoons sesame oil
3 tablespoons lemon juice
1 red Bell pepper
2 scallions
½ bunch Coriander
2 tablespoons soy sauce

Preparation steps

1.

Halve the cucumber lengthwise, scrape out the seeds with a spoon and cut crosswise into slices.

Pour about 500 ml (approximately 2 cups) of boiling water over the pasta and let stand for 5 minutes, then drain.

Halve the chile, remove the seeds and cut into thin strips. Mix with the sesame oil and lemon juice and pour into the pasta.

Rinse the bell pepper, trim, and remove seeds. Cut one half into thin strips and cut the other half into small triangles or diamonds.

Rinse, trim and cut the scallions into thin rings.

Mix the prepared vegetables and half the cilantro leaves with the pasta and season with soy sauce. Serve on plates with sprinkled cilantro.
