Ingredients

for

For the pastry
2 cups Almond flour
0.333 cup Coconut oil (melted)
3 Tbsps Maple syrup
1 tsp cinnamon
For the fillling
½ Tbsp sugar
1 cup fresh or frozen Passion fruit puree
2 Tbsps cornstarch
1 cup Whole milk
a few drops Vanilla
To decorate
2 Passion fruit

Preparation steps

1.

Preheat oven to 350F and spray 4 ramikins

In a small bowl, mix together the almond flour, coconut oil, mapyle syrup and the ground cinnamon. Mix together until everything is combined and it is a little sticky.

Divide crust into 4 and press into each ramikin. (if mixture is sticking to your hands, add some oil to your hands).

Bake for 8-10 minutes until just lightly browned

For the filling: mix together the cornstarch and a few spoons of the whole milk until there are no lumps

In a saucepan, add the remaining milk , add the cornstarch mixture, sugar and vanilla. Mix well. Heat to medium until it starts to thicken. When it starts to thicken, turn off the stove.

7.

Allow to thicken and cool for about 20 minutes. Pour evenly into each ramekin. Scatter the passion fruit seeds over the top and cool completely.

8.

Put in fridge for 3 hours or overnight
