1 lemon (untreated)
2 garlic cloves
1 tsp Mustard seed
1 pinch ground Fennel
1 Tbsp chopped Fresh herbs (mixed; parsley, chives, basil)
4 Tbsps olive oil
400 grams Olives (green, pitted)
Sea salt (to taste)

Preparation steps

Rinse lemon, wipe dry and grate peel. Cut in half and squeeze the juice. Peel the garlic and finely mash together with some sea salt. Crush mustard seeds in a mortar finely and mash together with the fennel and garlic. Mix all ingredients well and let stand for at least 2 hours.

Serve with white bread, if desired.
