6 Tomato confit
5 cups Penne
3 cups Arugula
3 ½ ozs Parmesan
3 small scallions
1 tsp Caper
1 Tbsp balsamic vinegar
4 Tbsps olive oil

Preparation steps

1.
Cook the pasta in a large pan of salted, boiling water, according to cooking instructions on the packet.
2.
Drain and place in a bowl. Add tablespoon of olive oil, mix and leave to cool.
3.
Peel and finely chop spring onions. Cut slices of ham into thin strips. Cut the confit tomatoes into quarters. Wash and dry the rocket.
4.
Prepare a French dressing with the salt, pepper, balsamic vinegar and olive oil.
5.
Grate the Parmesan into flakes using a vegetable peeler.
6.
Divide the pasta, rocket, ham, onions and confit tomatoes onto 6 plates. Pour over the French dressing and sprinkle with flakes of parmesan. Serve immediately.
