- 1 kilogram Salsify
- 1 organic lemon (zested and juiced)
- salt
- 1 tsp sugar
- 200 grams Prosciutto
- 5 Tbsps Canola oil
- 1 tsp honey
- 2 Tbsps White vinegar
- 2 Tbsps freshly chopped parsley
- peppers
Preparation steps

For the salsify: Peel the salsify, rinse and place in a bowl of water with the lemon juice. Drain then cook in salted water with the sugar until tender, around 20 minutes. Drain, pat dry and cut into short pieces.

Cut the ham into 1.5 cm (approximately 1/2 inch) wide strips. Wrap around the salsify pieces and arrange on a large serving platter.
3.
For the vinaigrette: Whisk the oil, honey, vinegar, lemon zest and parsley together and season with salt and pepper. Drizzle over the salsify to serve.
