- For the sauce
- 1 onion (peeled)

- 2 cups canned Tomatoes

... Instead of a tomato sauce, use 200g mascarpone or ricotta and a mixture of chopped soft herbs, zest of ½ lemon and grated Parmesan.
Preparation steps
1.
Cook the pasta in boiling salted water according to packet instructions. Drain, toss with olive oil and keep warm.

Whiz the sauce ingredients in a blender until smooth. Add 1 tbsp olive oil to a pan and add the sauce. Cook gently for around 20 minutes until the harsh onion taste has gone and the sauce has reduced a little. Adjust the seasoning and toss the pasta in the sauce.
3.
Lay 2 slices of ham on each plate in a cross and spoon the pasta into the middle. Fold the ends of the ham over the pasta to form a parcel.
4.
Spoon a little extra sauce around to serve.
