- 1 onion
- 1 garlic clove
- 2 Tbsps vegetable oil
- 2 tsps butter
- 500 grams Ground lamb
- 1 pkg pureed Tomatoes (500 grams)
- 2 tsps dried herbes de Provence
- salt
- freshly ground peppers
- 2 Tbsps Madeira Wine
- 40 grams black Olives
- 60 grams Parmesan (freshly grated)
- 400 grams Pappardelle noodles (Very broad noodles)
- thyme (for garnish)

Preparation steps
1.
Peel onion and garlic and chop finely. Heat oil and butter in a pan. Sauté onion and garlic in oil and butter, add ground lamb and fry until crumbly, stirring often.
2.
Add pureed tomatoes, season with herbs de Provence, salt and pepper and simmer for about 5 minutes. Season with Madeira wine.
3.
Pit olives and cut into uniform quarters.
4.
Cook pappardelle according to package instructions in boiling salted water until al dente.
5.
Place pappardelle on plates. Top with the lamb sauce and sprinkle with olives. Top with Parmesan and serve garnished with thyme.
