- 400 grams Pappardelle noodles
- 4 Tbsps Pine nuts (roasted)
- 4 handfuls Baby spinach
- 150 grams Bacon (cut into strips)
- salt
- peppers (freshly ground)
- olive oil (cold pressed)
- 1 Tbsp Lemon peel (finely chopped without the white skin)
Preparation steps

Rinse the baby spinach thoroughly, trim and shake dry. Roast the bacon in a pan without adding the oil. Cook the Pappardelle noodles in plenty of salted water until al dente and drain (store some cooking water and set aside).

Mix the hot pappardelle noodles immediately with 2-3 tablespoons olive oil, spinach, bacon, pine nuts and lemon zest. Add 2-3 tablespoons cooking water and mix. Season with salt and pepper and serve immediately.
