- 1 kilogram very soft Papaya
- 2 lemons (juiced)
- 500 grams Fructose
- 6 tsps Liquid sweetener
- 3 sheets gelatin

Preparation steps

Halve the papayas and remove the seeds. Scoop the fruit from the shell, and pass through a fine strainer. Mix the papaya with the fructose and the lemon juice in a saucepan. Simmer for 20 minutes, then remove from the heat.

Soak the gelatin in cold water. Squeeze the gelatin, and mix with 3 tablespoons of the fruit puree. Add the gelatin mixture and the sweetener to the remaining puree, and stir to combine. Fill the prepared jars to the brim with the jam, seal tightly, and cool completely.
