- 200 grams Pastry flour
- 400 milliliters milk
- 4 eggs
- salt
- 4 Tbsps butter
- 1 Apple
- 3 sticks Leeks
- 2 red paprika
- 300 grams Sauerkraut (canned)
- 100 milliliters Vegetable broth
- peppers
- cinnamon (to taste)

Preparation steps
1.
Mix the flour with a little milk until smooth. Add in the eggs and mix well to form a smooth batter.

Peel, core and dice the apple finely. Trim the leeks and cut into thin rings.
Heat 1-2 tablespoons butter in a saucepan and saute the leeks and apple. Add in the herbs and mix well. Pour in the broth and cook over medium heat for 10 minutes. Stir in the cinnamon and season with salt and pepper.

Divide the batter into 4 portions. Heat the butter in a pan and pour in the batter portion in batches to make large pancakes.

Top the cooked pancakes with the leeks and apple mixture and sauerkraut, and then roll up. Cut in half diagonally, arrange on warmed plates and serve.
