250 grams Pastry flour
4 Tbsps sugar
1 tsp Baking powder
1 pinch salt
4 Tbsps butter

Preparation steps

1.

Separate the eggs. Beat the egg yolks with the buttermilk, flour, sugar and baking powder. Let rest for about 20 minutes.

Beat the egg whites with a pinch of salt until stiff. Fold into the batter. In a pan, melt some butter. Ladle a small amount of batter and bake on both sides until golden brown. Repeat with the remaining batter. If desired, keep the finished pancakes warm in the oven (80°C; approximately 175°F).

3.

Sprinkle the pancakes with powdered sugar and serve with maple syrup.
