- Pastry flour
- 150 grams Bacon
- 2 Tbsps butter
- salt (pepper)
- 1 Tbsp lemon juice
- 1 organic lemon
- ½ bunch chopped parsley

Preparation steps
1.
Rinse fish and pat dry. Season with salt and pepper, sprinkle with lemon juice and dredge in flour. Dice bacon.
2.
Heat 1 tablespoon butter in a pan. Add bacon and fry until crispy. Remove bacon and set aside.
3.
Add fish to pan and fry, in batches if necessary, about 3 minutes per side. Remove and keep warm.
4.
Return bacon to pan with remaining butter. Add parsley and sauté briefly.
5.
Serve flounder topped with bacon-butter and parsley. Cut a lemon into wedges and serve with fish.
