- 7 ozs Rice noodles
- 3 garlic cloves
- 1 onion
- 9 ozs shrimp (ready to cook)
- 9 ozs Chicken breasts
- 1 red chili pepper (depending on taste)
- 3 Tbsps vegetable oil
- ⅔ cup Chicken broth
- 2 Tbsps Oyster sauce
- 2 Tbsps soy sauce
- salt
- peppers
- 2 sprigs cilantro
- 2 scallions (with tops)
- 1 cup Cashews (unsalted, coarsely chopped)
- 1 Lime

Preparation steps
1.
Cook the noodles according to the directions on the package. Drain. Refresh in cold water. Drain well.
2.
Peel and finely chop the onion and garlic.
3.
Halve the chilis. Remove the ribs and seeds and slice into narrow rings.
4.
Rinse the chicken breast and pat dry. Slice into strips. Marinate in the soy sauce.
5.
Rinse the shrimp and pat dry.
6.
Remove the roots and ragged tops from the spring onions. Finely chop the white parts. Slice the green parts on the diagonal into rings.
7.
Slice the lime into 8 wedges.

Heat the oil in a wok. Add the meat and sear quickly. Remove from the wok and season with salt.
9.
Saute the chili, onions and garlic in the remaining oil. Add the shrimp and continue to saute briefly. Pour in the broth and simmer for 2 minutes.
10.
Mix together the noodles and the meat. Combine everything with the oyster and soy sauce. Season to taste with salt and pepper. Mix in the spring onions and heat through.
11.
Garnish with the lime wedges and cashew nuts. Serve.
