Preparation steps

Pluck the basil leaves and peel the garlic. Crush both with the pine nuts, lemon juice, 2 tablespoons of parmesan and a little oil into a fine paste. Add oil as needed to the desired smoothness. Season with pepper and a little salt.

Rinse and open the oysters. Drain the water and loosen the oyster meat with the knife (but leave in the shell). Spread the pesto over the oyster and sprinkle with the remaining cheese. Place on the hot grill and cook for 5-6 minutes until the cheese begins to melt. Serve.
