1 kilogram Cherry tomatoes
2 Tbsps olive oil
1 Tbsp balsamic vinegar
salt
peppers
olive oil (to cover)

Preparation steps

Rinse and halve the tomatoes, then place in a bowl. Mix with the olive oil and balsamic vinegar, then season to taste with salt and pepper.

Place the tomatoes on a baking sheet lined with parchment paper.  Bake the tomatoes in a 170°C (approximately 340°F) oven for 30 minutes. Reduce the heat to 80°C-100°C (approximately 175°F-215°F) until they have shriveled, but are still moist. Remove from the oven and let cool. Place the tomatoes in jars, top with the olive oil, and place in the refrigerator.
