Oven Baked Latkes
Peel the potatoes and onion and grate into a clean tea towel.
Squeeze the tea towel to remove as much liquid from the potatoes and onion as possible. Transfer the grated potatoes and onion to a bowl and mix with the matzo meal, egg yolk and vegetable oil. Season with salt and pepper. Shape the mixture into small patties, place on a well-greased baking sheet and sprinkle with paprika. Bake in an oven preheated to 220°C (approximately 425°F) for about 10-15 minutes, until golden brown.
Remove from the oven, transfer to a large platter, garnish with chives and serve.
