Ingredients

For the filling
3 ½ ozs Glass noodles
2 carrots (roughly grated)
2 ½ cups white Cabbage (finely chopped)
4 cups Bean sprout
2 chili peppers (diced)
2 garlic cloves (finely chopped)
2 Tbsps sesame oil
Worcestershire sauce
20 Spring roll dough sheet
1 egg (lightly beaten)
Fat (for frying)

Preparation steps

1.
Cook the noodles according to the directions on the packet.
2.
Mix the carrots, cabbage, bean sprouts, chillies and garlic with the oil.
3.
Drain the noodles and cut them into short lengths using a pair of kitchen scissors. Add the noodles to the vegetables and season with salt, ground black pepper, soya sauce and a pinch of sugar.
4.
Place about 2 tbsp of the filling in the middle of one of the pastry sheets and spread well. Turn in the sides, brush the edges with the egg and either roll up or tie into a sack. Do this with all the sheets until the filling is used up.
5.
Fry in hot oil for about 4-5 minutes until golden brown. Pat dry with kitchen paper and serve with soya sauce.
