80 grams candied orange (finely chopped)

250 grams sugar
400 grams ground almonds
2 Tbsps Shelled pistachio (chopped)

Preparation steps

Beat the eggs with 150 g (approximately 2/3 cup) of sugar until light and creamy. Stir in the ground almonds, candied orange peel and orange zest. Knead to form a smooth dough. Roll the dough between two pieces of plastic wrap to about 1 cm (approximately 1/2 inch) thick. Cut into diamond shapes using a cookie cutter. Place on a baking sheet lined with parchment paper and bake for 12 minutes in an oven preheated to 160°C (approximately 325°F).

Bring the orange juice and remaining sugar to a boil. Reduce the heat and simmer for about 5 minutes, until slightly thickened. Remove the cookies from the oven, brush with the orange syrup and sprinkle with chopped pistachios. Allow the cookies to dry and store in an airtight container.
