- 50 milliliters Red wine vinegar
- 15 grams fresh ginger
- 100 grams brown sugar
- 4 Tbsps Campari
- 2 Oranges (fresh)
- 2 shallots
- salt
- peppers

Preparation steps
1.
Grate oranges carefully. Cut zest into very thin strips.

Separate orange segments, preserving all juice. Squeeze remaining juice by hand. Chop orange segments.
3.
Peel ginger and chop finely. Peel shallot and chop very finely. Combine both with orange juice, orange pulp, zest, sugar, vinegar and campari. Bring to a boil and simmer on low heat for about 30 minutes. Season with salt and pepper and serve warm or cold. Goes very well with poultry and game dishes.
