800 grams onions
2 Tbsps sunflower oil
1 tsp sugar
salt
freshly ground peppers
800 milliliters Beef broth
200 milliliters Red wine
2 garlic cloves
1 tsp lemon juice
4 slices white bread
80 grams freshly grated Gruyere

Preparation steps

Peel onions and cut into thin rings. Heat oil in a saucepan and saute onions for 10-15 minutes, stirring, until soft. Season with sugar, salt and pepper and saute for another 10 minutes, stirring occasionally, until browned.

Add broth and wine, bring to a boil and simmer for another 15 minutes. Peel garlic and squeeze through a garlic press into the soup. Season with lemon juice, salt and pepper.

The oven to preheat grill.

Pour onion soup into 4 ovenproof ramekins ( or ovenproof ceramic bowls). Top each with 1 slice of white bread and sprinkle with cheese. Bake soup under a broiler until cheese is melted and golden, watching carefully. Serve.
