Ingredients

¼ cup warm water
¾ tsp Dry yeast
½ tsp granulated sugar
¾ cup all-purpose flour (plus extra for work surface)
1 Tbsp olive oil
1 pinch salt
For Topping
3 cups slab Bacon (cut into strips)

3 large sweet onions (peeled and thinly sliced)
2 cloves garlic cloves (peeled and minced)
salt (to taste)
½ cup Crème fraiche
½ cup Ricotta cheese

In a small bowl, combine warm water, yeast and sugar, stirring to blend. Allow mixture to sit for about 10 minutes, until frothy and foamy.

Place flour in a separate bowl and make a well in the center. Add the olive oil, salt and yeast mixture. Stir until the dough comes together and forms a ball.

Dust a clean work surface lightly with flour and knead the dough until firm, about 5 to 7 minutes. Return dough to the mixing bowl, cover tightly with plastic wrap and allow to sit in a warm place for about 1 hour, or until the dough has doubled in volume.

Preheat oven to 400º F.

Place the bacon strips in a large skillet, and add a few drops of olive oil. Cook the bacon until brown and crispy. Transfer bacon to paper towels to drain thoroughly.

Add the sliced onions to the pan drippings, season with salt, cover and cook until the onions are translucent, about 10 minutes. Remove the cover and cook until the onions are caramelized and soft, about 15 minutes. Stir frequently, and do not burn. Once the onions are nicely browned and sweet, remove them from the heat source and set aside.

In a small bowl, combine the creme fraiche and ricotta cheese.

Shape dough into a ball. Roll out in a rectangle to a thickness of about 1/8-inch. Place on baking sheet and bake for about 4 to 5 minutes.

Remove dough from oven and spread evenly with cheese mixture, place a layer of caramelized onions on the cheese and sprinkle with bacon.

Transfer to oven and cook for 6 to 8 minutes, or until toppings are bubbly and the dough is crisp on the bottom.

Remove from oven and slice. Serve.
