8 eggs
4 Tbsps Whipped cream
150 grams Goat cheese

4 Tbsps butter

Preparation steps

Preheat the oven to 100°C (approximately 200°F).

Rinse the spinach and spin dry. Whisk together the eggs with the cream, 2 tablespoons cream cheese and season with salt and pepper. Melt 1 tablespoon butter in a hot frying pan and pour in about 1/4 of the egg mixture. Let thicken over low heat for 2-3 minutes. Remove and keep warm in the oven. Prepare the remaining omelettes in the same manner. To serve, distribute 1/4 of the spinach each omelette, and crumble the remaining cheese on top and fold.
