- 1 cup sorghum flour
- ½ cup Millet flour
- ½ cup Almond flour
- ½ cup rolled oats
- ¼ cup rice bran
- 1 tsp garlic powder
- 1 tsp salt
- 1 tsp xanthan gum
- 2 ½ tsps active dry yeast
- 3 eggs (beaten)
- 5 Tbsps olive oil (plus extra for brushing)
- 1 Tbsp honey
- ½ cup warm water
- 5 ozs Olives (pitted and sliced)

Preparation steps
1.
Heat the oven to 190°C (170° fan) 375°F gas 5. Line a baking tray with non-stick baking paper.
2.
Mix together the flours ground almonds, oats rice bran, garlic powder, salt, xanthan gum and yeast in a mixing bowl.
3.
Make a well in the centre and add the eggs, oil and honey. Beat well.
4.
Slowly add the warm water, beating constantly to a smooth, sticky batter. Continue to beat for 1 minute to to make a smooth, creamy dough. Knead in about 2/3 of the olives.
5.
Using wet or oiled hands, form pieces of the dough into round balls and place on the baking tray. Stud the surface with the remaining olive pieces.
6.
Bake for 15 minutes, then brush with olive oil and bake for a further 5-10 minutes until cooked through. Place on a wire rack to cool.
