2 ¼ cups Ricotta cheese (drained)
2 cloves garlic cloves (finely chopped)
cup black Olives (drained and chopped)
½ cup grated Parmesan
1 handful chopped Fresh herbs (rosemary, thyme, basil)
lemon juice
4 Tbsps olive oil

Preparation steps

Heat the oven to 220°C (200°C in a fan oven), 425°F, gas 7.

Put the drained ricotta in a bowl. Mix together the ricotta, garlic, olives, parmesan and herbs, and season to taste with a dash of lemon juice, salt and ground black pepper.
3.
Divide the mixture between four flat, oven-proof dishes and drizzle with oil. Bake in the oven for around 20 minutes. Serve with crackers if desired.
