Preparation steps
1.
Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6.
2.
Mix the yeast with 5 tbsp of lukewarm water.

In a bowl mix the flour with half a tsp of salt and make a well in the middle. Pour the yeast into the well and dust with a little flour. Then cover and allow to rise in a warm place for approx. 15 minutes.

Add 200 ml lukewarm water and knead into a smooth dough. Cover and allow to rise again for 1 hour until the dough has doubled in size.
5.
Re-knead the dough thoroughly and break into 15 pieces. Roll each piece until it is about 40 cm long. Shape the strands in to pretzels and place on a baking tray lined with grease-proof paper.
6.
Heat a litre of water and dissolve the baking soda in it. One by one, dunk the pretzels in the water for approx. 20 seconds then remove. Allow to drip dry then place them back on the baking tray.
7.
Allow to rise again for another 15 minutes, then sprinkle with the coarse salt and bake in the oven for 20-25 minutes until brown and crispy.
