1.333 cups all-purpose flour
½ tablespoon Baking powder
1 egg white
0.333 cup sugar
cup butter (melted)
½ cup 2% milk
½ cup mixed Berry
3 tablespoons rolled oats

Preparation steps

1.
For the muffins: heat the oven to 180°C (160° fan) 350°F gas 4. Place 6 paper cases in a muffin tin.

Sift the flour and baking powder into a mixing bowl.

Whisk together the egg white, sugar, butter and milk.
4.
Stir into the dry ingredients and stir until just combined. Gently stir in half the berries.
5.
Spoon the mixture into the paper cases and gently press the remaining berries into the tops.
6.
Bake for 20-30 minutes until golden and a skewer inserted in the centres comes out clean. Sprinkle with the oats for the last 5 minutes of cooking time. Cool in the tin for 5 minutes, then place on a wire rack to cool completely.
