- For the base
- 1 ½ cups butter Cookie
- 1 cup almonds (chopped)
- 2 Tbsps brown sugar
- ⅔ cup melted butter
- For the topping
- 4 sheets gelatin
- 1 ⅛ cups Yogurt
- ½ unwaxed lemon (juiced, zest grated)
- 1 Tbsp powdered sugar
- ⅜ cup cream (whipped)
- 3 ⅓ cups mixed Berry (blackberries, blueberries and redcurrants)
- 2 Tbsps honey
- ⅓ cup Apple juice

Preparation steps

Chop the biscuits in a food processor and mix in a bowl with the almonds, sugar and the butter. Transfer to the tartlet dishes and press down evenly creating an edge. Chill in the fridge.

To make the cream, soften the gelatine in cold water. Mix together the yoghurt, lemon juice, lemon zest, and the icing sugar until smooth. Wring out the gelatine and heat in a small pot. Stir in 3-4 tbsp of the yoghurt cream and then fold into the remaining cream. Fold in the whipped cream. Transfer the cream to the tartlet dishes and spread evenly. Chill for at least 3 hours.

Mix together around 200 g berries with the honey and the apple juice and bring to the boil. Squash with a potato masher or a fork, simmer for 5 minutes and then sieve and leave to cool.

Add the fruit purée to the tartlets just before serving and garnish with the remaining berries.
