Mandarin orange (finely grated zest & chopped flesh)

Preparation steps

1.
Heat the oven to 190°C (170° fan) 375°F gas 5. Place 6 paper cases in a muffin tin.
2.
Sift the flour into a mixing bowl and stir in the remaining ingredients until blended.
3.
Spoon into the paper cases and bake for 18-20 minutes until lightly golden and risen. Leave to cool in the tin for 5 minutes, then place on a wire rack to cool completely.
