Preparation steps

1.

Soak oats in 500 ml (approximately 2 cups) water for about 1 hour. Stir yeast in 250 ml (approximately 1 cup) of warm water to dissolve. Mix in the flour, oat flour, soybean flour, salt and honey and process to a smooth dough.

2.

Drain the oats well and work into the dough. Let rise in a warm place.

3.

Knead the dough well, shape into a round, place in a greased loaf pan (2 liters/about 8 cup capacity) and sprinkle with oatmeal. Let rise again and bake in a preheated oven at 200°C (approximately 400°F) for about 1 hour. Then leave in the pan about 15 minutes to cool before unmolding and allowing to cool on a wire rack.
