¾ cup all-purpose flour (plus extra for dusting)
¼ tsp salt
½ tsp baking soda
½ cup butter
½ cup light brown sugar
½ cup sugar
1 egg (lightly beaten)
1 tsp vanilla extract
1 ½ cups rolled oats
¾ cup finely chopped almonds
1 cup Poppy seeds

Preparation steps

1.
Sift together the flour, salt and bicarbonate of soda and set aside.
2.
Beat together the butter and both sugars in a mixing bowl until fluffy.
3.
Beat in the egg and vanilla, then mix in the flour mixture, oats and nuts.
4.
Divide the dough in half and turn out onto a lightly floured surface and shape into 2 rolls about 25cm|10" long and 3cm|1 1/2" in diameter.
5.
Roll the logs in the poppy seeds, then wrap in cling film and chill for 1 hour.
6.
Heat the oven to 190°C (170° fan) 375°F gas 5. Line 3 baking trays with non-stick baking paper.
7.
Cut the logs into slices and place apart on the baking trays.
8.
Bake for 10-15 minutes until golden. Cool on the trays for 5 minutes, then place on a wire rack to cool completely.
