- 1 ¼ cups Basmati rice
- 21 ozs Chicken breasts (diced)
- 2 Tbsps Corn starch
- 4 Tbsps sesame oil
- 1 green pepper (diced)
- 3 scallions (cut into rings)
- 1 green chili pepper (sliced)
- 1 pc fresh ginger (the size of a walnut; chopped)
- ¾ cup Cashews
- 4 Tbsps Lime juice
- 2 Tbsps light soy sauce

Preparation steps
1.
Cook the basmati rice according to the package instructions.
2.
Dust the chicken pieces with the cornflour in a deep plate.
3.
Heat the sesame oil in a deep frying pan or wok and stir-fry the meat over a high heat for 2-3 minutes, until slightly crispy. Take out of the wok.
4.
Add the pepper, spring onions, chilli, ginger, and cashew nuts into the wok and stir-fry over a high heat for about 3 minutes.
5.
Return the meat to the wok. Add the lime juice, soy sauce and approximately 5 tbsp water and briefly bring to the boil. Serve with the rice.
