- 4 fresh Salmon fillet
- 4 tsps gluten-free Dijon mustard
- 4 tsps honey
- 2 slices gluten-free bread (crushed to crumbs)
- 3 Tbsps finely chopped Walnut
- 1 Tbsp sliced almonds
- ½ tsp sunflower oil
- To serve
- Snap pea
- To garnish
- Lemon wedge

Preparation steps
1.
Heat the oven to 200°C (180° fan) 400°F gas 6. Grease a baking tray.
2.
Put the salmon on the baking tray.
3.
Mix together the mustard and honey and brush over the salmon.
4.
Mix the breadcrumbs with the walnuts, almonds and oil and press onto the salmon.
5.
Bake for 12-15 minutes, until the fish flakes easily with a fork and the topping is lightly browned.
6.
Serve with mangetout and garnish with lemon wedges.
