1 pinch salt
2 drops vanilla extract

Preparation steps

1.
Heat the oven to 160°C (140° fan) 325°F gas 3. Line a large baking tray with non-stick baking paper.

Grind 200g pecans and the icing sugar together in a food processor until finely ground.
3.
Whisk the egg whites with the salt until stiff. Stir in the pecan mixture with the vanilla and remaining chopped pecans.
4.
Place spoonfuls on the baking tray and place a pecan half on each macaroon.
5.
Bake for 10-20 minutes, until very light brown. Cool on the baking tray for a few minutes, then place on a wire rack to cool completely.
