- ⅔ cup butter (one-third melted)
- 1 cup brown sugar
- 2 ⅔ cups ripe Figs (finely chopped)
- 2 cups almonds
- 1 tsp cinnamon
- 6 sheets Puff pastry
- For the vanilla sauce
- 2 cups milk
- 1 Vanilla bean
- 6 egg yolks
- ⅓ cup sugar

Preparation steps

Heat the oven to 180°C (160°C in a fan oven), 350°F, gas 4 and grease a baking tray.

Melt 100 g butter in a pot. Stir in the sugar and allow to caramelise. Add the figs, almonds and cinnamon and cook for 3 min, then leave to cool.

Cut each sheet of pastry into four equal triangles and place one tbsp of the filling in the middle of each one. Gather the corners of the triangle together like a sack, brush with the melted butter and place on the prepared baking tray. Bake for about 6 minutes until crispy.

To make the vanilla sauce, place the milk and the vanilla pod in a pot and bring to the boil. Beat the egg yolks and the sugar until foamy. Slowly pour the mixture into the hot milk, stirring as you do so. Continue to stir on a low heat until the sauce thickens - do not allow to boil! Remover the vanilla pod, arrange the parcels on plates, serve with the cooled sauce and sprinkle with cinnamon.
