- 2 Tbsps olive oil
- 4 Chicken thigh (skinned and deboned, cut into chunks)
- 1 yellow pepper (seeded and finely sliced)
- 1 red pepper (seeded and finely sliced)
- 1 medium Zucchini (chopped)
- 1 ½ tsps Ras el hanout (spice mix)
- ⅔ cup black Olives (pitted)
- 2 cups canned Tomatoes
- salt
- peppers
- For the couscous
- 1 ½ cups Couscous
- 1 cup chicken (or vegetable stock)
- ⅓ cup raisins
- lemon juice

Preparation steps
1.
Heat the oil in a pan and fry the chicken until golden, then remove with a slotted spoon and set aside.

Add the vegetables and saute until starting to soften, then add the spice mix and cook for 1 minute. Add the chicken back to the pan, toss to coat, then add the olives and tomatoes and simmer for 30 minute or until all is tender. Season.
3.
Place the couscous in a bowl, add the raisins, cover with the hot stock and clingfilm the bowl. Leave for 10 minutes or so until tender, then fork through the grains and add the lemon.
4.
Serve the hot stew with the couscous alongside.
